How much food to order: quantity guides for dal, rice, paneer and sweets

The question behind every catering order is the same: how much food is enough? Too little embarrasses a host, and too much is money in the bin. The guides on this shelf turn guest counts into kilograms and pieces for the dishes people actually order: dal, sabzi, paneer, rice, rotis, biryani and sweets.

Each one states the planning figure, shows how it was worked out, and says which figures are the kitchen's rule of thumb. Start with the food quantity calculator for a full menu, or the halwai ka parcha in Hindi for the raw-material list a halwai asks for.

Figures are cooked weight, and they change with the menu, the meal and how many guests are children. Tell Baljeet your guest count in the form below and he will adjust the numbers for your menu.
